I love pâté. I don’t know if it’s because I grew up in an Asian household and lived off of bánh mì for the majority of my life, but the idea of a spreadable meat item never disturbed me—much less the idea of eating liver. So, when the opportunity arose to eat fancy pâté, I literally jumped out of my chair. Les Trois Petits Cochons not only provides foodies like me with five differently flavored pâtés, but they’re all also organic. Despite the name, the company has even made some of those varieties without pork.

Ada Desmond, Marketing Manager, Les Trois Petits Cochons“There is a demand for pork-free pâtés and charcuterie, and while we do produce such products in our traditional line, the Mousse du Perigord and Mousse de Canard au Foie Gras, this was an opportunity for us to add such a product to our growing organic line,” explained Ada Desmond, Marketing Manager. “This will be the only pork-free organic pâté we offer!”

Available in an easy-to-peel, 4 oz slice, these pâtés are sure to satisfy any adventurous eater. I, for one, have been going through each flavor armed with crackers and French bread, but can definitely see it on any cheese or charcuterie board—the organic Caperberries and Petits Toasts are conveniently available for just this purpose.

September is the tentative release date, so consumers will soon find these products on retailers' shelves. The delicious spreads are available in five amazing flavors:

  • Organic Mousse Truffee – organic chicken liver mousse with truffles
  • Organic Pâté Basque – organic pork pâté with Espelette pepper
  • Organic Mousse Basque – organic chicken liver mousse with Espelette pepper
  • Organic Pâté de Campagne – organic country pork pâté
  • Organic Mousse aux Cepes – organic chicken liver, pork, and wild mushroom mousse

Why are they called mousse? Well, according to Ada, they’re smoother and silkier than coarse pâtés due to the addition of cream and eggs, which are incorporated into the mixture for a lighter result. Pâtés, which include mousses, are made up of ground meat ranging in texture from coarse to smooth—mousses are on the smoother side of the spectrum.

Pâtés make a wonderful treat either on its own, with bread and crackers, or on a charcuterie board

“The pork-free organic chicken mousse’s flavor is close to all the other mousse pâtés we already produce, which is both delicate and rich,” Ada continued. “Our organic line of pâtés are also currently the only such product available on the market!”
