Last month’s Winter Fancy Food Show was a whirl of new foods, faces, and fun (and business). Nested among the new and innovative products, though, were some with storied histories and venerable traditions, and companies like Recla—a nearly five-decade old Italian producer of artisan cured meats—were there to show age-old gourmet techniques are still as relevant as ever.
We caught up with Hannes Jörg at the Atalanta Corporation booth to learn more about the company and the product available in the U.S. through Atalanta.
“Speck is a very traditional product, and Recla is specialized in the production of this dry cured ham, and we’ve been producing it for almost 50 years. We were the first producer to bring it into the U.S.,” said Jörg. “The product is very special because of a combination of air drying, smoking, and salting.”
Recla speck is available in both half- and whole- piece hams for food service and in convenient pre-sliced packaging for retail.
