John Gibson Spotlights Shaft's Cheese & Co.'s Premium Portfolio

Shaft’s Cheese & Co. is locked and loaded with a full lineup of premium offerings sure to make any deli department shine. To get a close up look of the cheesemaker’s portfolio, John Gibson took a beat to give us an exclusive breakdown of some of the company’s hottest offerings, like its blue cheese stuffed olives.

John Gibson, Owner, Shaft's Cheese & Co.“…[what] we’re really excited about and what we’re really showcasing [is] our blue cheese stuffed olives. They come in a retail pouch which is five ounces. About 15. They are a 10-month cured California queen olive, 100 percent stuffed with our one-year aged blue. So no filler cheese, no cut cheese, only our blue cheese,” explains Co-Owner John.

The olives are brineless, needing to be refrigerated in the fresh service deli area to be, but they’re able to maintain their freshness because they’re not in the usual liquid brine. They have a 120-day shelf-life in the bag and once opened, they have a 10–14 days lifespan. The olives come in a retail case pack and then also a foodservice pack, which is slightly larger for foodservice customers.

On top of its blue cheese stuffed olives, Shaft’s Cheese & Co. has a line of aged cheeses, including its age blue; one-year age blue; two-year age blue, Ellie’s vintage; and Serendipity, which is the cheesemaker’s one-year age blue cheese layered with a one-year aged sharp Cheddar.
