Any time spent with the team at Maison Agour is time well spent. The French cheesemaker knows how to liven up the specialty space with its unique products from the Basque Country, and Export Manager Guillaume Dupin is pouring all of that and more into our cups.
“We’re showcasing the PDO from the Basque Country. So it’s 100 percent pure sheep’s milk, fresh-based aged cheese from the Basque Country. The one we’re showcasing today is aged up to a year with a natural rind,” Guillaume told me.
Out of all of the dairies in the Basque Country, Guillaume explained that Maison Agour is the last independent, family-owned company. According to him, the company is also the last of these dairies to age its cheeses on wood boards.
“We’re looking at a cheese made from sheep’s milk, so it’s got a high fat content and texture,” said Guillaume as we turned our attention to a local wine pairing. “So, we’re looking at something fresh, dry with a little bit of acidity, and our local wine Txakoli is perfect for it.”
