Welcome to What's In Store! On this episode, Jeff Wideman, Master Cheese Maker, Maple Leaf Cheese, joins DeliMarketTV to share the company's claim to fame, its English Hollow Cheddar. The idea for the English Hollow Cheddar came to Mr. Wideman while he was travelling in Holland in the early 1990's. He liked the way the Dutch were curing Goudas at that time and so tried to incorporate those same ideas into a cheddar-style cheese. The company has produced a cheese that is aged different that almost any other cheddar that Mr. Wideman knows of, in Wisconsin especially. The company had a World Champion in 2008 with the English Hollow Cheddar which won Best 1-2 Year Old Cheddar in the World Cheese Contest.
