The company is now offering five cheeses and has been producing cheese for five years. The company takes different techniques used to make different European cheese and applies those to the company's milk in Wisconsin.
This year, the company came out with a new cheese- Glacial Lakes. It is a cheese that is based on the mountain cheese. It is a raw milk cheese with very creamy notes it. A cheese that the company wishes it could sell more of is its washed rind cheese- Green Fields. The cheese is based on an old technique from the Trappists monks of Belgium and offers a mild but very nice flavor.
