Swiss Chalet's Rob Sobkowski Discusses La Rose Noire

Swiss Chalet Fine Foods is helping all foodservice operators skip straight to dessert with an exciting line boasting tantalizing new additions. At IDDBA 2019, we caught up with Rob Sobkowski, Corporate Pastry Chef, to learn more about how foodservice operators can take advantage of Swiss Chalet Fine Foods’ La Rose Noire line.

Rob Sobkowski, Corporate Pastry Chef, Swiss Chalet Fine Foods“Today, we’re featuring our La Rose Noire line, which is a super high-end line invented by Gerard Dubois and made with 100 percent single origin, 69 percent Filipino bean chocolate,” Rob told me. He also noted that the line features different sized tart shells, different sized decorations, as well as beautiful tulip cups, which can be used to store creams, fruits, and beautiful garnishes.

In addition, the La Rose Noire line features macarons with all-natural coloring and flavors that Rob described as absolutely beautiful. The flavors include mango, raspberry, banana, and more.

Lastly, Rob pointed to the La Rose Noire line’s special tarts. A perk of the tarts is that they freeze right to the show case. With flavors like lemon curd, caramel hazelnut, and chocolate and pear, the tarts are exactly what foodservice operators need to finish the summer season on a super sweet note.
