Suffice it to say, I love bacon. I could eat piles of it every day—although my heart would probably give out after day five. So, you can only imagine how excited I was to hear about Tender Belly’s premium pork products launching in fourteen Nugget Markets locations throughout the Sacramento area. With delectable offerings like Signature Blend Dry-Rub Uncured Bacon and Berkshire uncured franks, I cannot wait to go to my local Nugget and snatch up some for myself!
Founded by two brothers from Iowa, Shannon and Erik Duffy, Tender Belly is dedicated to producing premium pork products that are “Certified Awesome,” according to a press release. The company partners with farmers across the country who treat the hogs with care and provide the best possible conditions, which means the pigs are vegetarian fed and kept out of crates. The meat is also free of antibiotics. The brothers noted that the pigs take longer to mature, but the extra fattiness means that the meat is more tender, with better flavor and juiciness.
The press release also noted that Tender Belly invests in ingredients that meet its high standards, looking for items that aren’t processed. It slow-cures its bacon for two weeks and cherrywood-smoke it for six hours. No water is added or injected, which means more protein per pound, less shrivel or shrink, and makes for perfectly cooked bacon.
The bacon will retail for $9.99 and franks $6.99. Tender Belly and Nugget Markets will eventually also offer pulled pork and breakfast sausage.
