One unique characteristic that sets the deli, dairy, bakery, and specialty food industry apart from others is heritage—a characteristic that Toscana Cheese Company showcases with pride through its variety of cheeses. For more than 25 years, Toscana Cheese Co. has balanced its company traditions with its state-of-the-art cheesemaking techniques to produce a brand of cheese that meets consumers' needs in a way that no one else in the biz is.
I chatted with Victor Paparazzo, company President, at this year's Winter Fancy Food Show, to find out more about Toscana Cheese Company and its Il Villaggio brand of mozzarella.
“The company has been in existence for 25 years. We manufacture a true fresh mozzarella artisan cheese made in a very traditional but state-of-the-art facility. We’ve been manufacturing the Il Villaggio brand for 19 years, and we have the privilege now of manufacturing this brand for Atalanta,” Victor told me. “We’ve captured the artisan cheesemaking and haven’t stepped away from that. The cheese has a true fresh mozzarella creamy flavor to it. It’s not a commodity cheese and that really is the distrinction of that product.”
Victor explained that Toscana Cheese’s mozzarella is available in a variety of sizes, which he believed distinguishes the company even more as it suggests that the variety of Toscana’s cheese and packaging is endless. This is crucial, Victor noted, to meet consumer demand today.
“The consumer today wants everything easy. They want to be able to open a package and plate it—it’s just that simple,” Victor said. “One of the items we like to feature and highlight is our one-pound log, which is pre-sliced, 26 pieces, which seems very friendly to the consumer…On the foodservice side, it has the benefit on portion control, but for the consumer, it presents itself in a way that it’s peel-the-package and it’s ready to serve.”
