Now four years running, Atalanta has once again been recognized by the National Restaurant Association for its new and innovative products, winning a FABI Award for its Piacenti Tuscan Roasted Porchetta with Herbs.
According to a press release, the Food and Beverage Innovation (FABI) Awards are designed to recognize new products for breakthrough achievements in taste, marketability, creativity, and profitability potential in foodservice operations. Atalanta’s latest product fits the bill—always on the lookout for unique and authentic food items, the company believes the Salumificio Toscano Piacenti product has perfected master craftsmanship over generations, working from ancient Roman recipes.
"What caught our attention about Salumificio Piacenti was their modern yet traditional production method,” explains Andrea Berti, Senior Business Development Manager. “The long roasting with local herbs is steeped in the ancient culinary traditions and creates this amazing combination of flavors that we fell in love with it. We knew this would be a special item to bring to our customers.”
As explained by the company, the Roasted Porchetta with Herbs is crafted from Pork Loins wrapped in Pork Belly, then brined in a traditional family recipe that includes local Tuscan herbs and spices. The Porchetta is glazed with the same ingredients used in the brine, including wild fennel, which is then roasted for ten hours. The result is a roast full of rich pork flavor, with a hint of earthy juniper berries, wild fennel, and other Mediterranean spices.
