Winter Fancy Food Show 2019 was a win on all fronts, if you ask me. With exhibitors, buyers/suppliers, attendees, and innovations both new and old out the wazoo, there was no going wrong this year—and no wrong path to take when walking through the endless maze of booths. One exhibitor still celebrating the high of a particularly esteemed win is Pacific Pickle Works, whose Michelada Shrub was awarded the fan favorite award and chosen by the judges at Monday’s Front Burner: A Foodservice Pitch Competition as the product “with the most potential for success in foodservice."

The Michelada Shrub is Pacific Pickle Works’ take on the traditional Mexican beverage that combines fresh lime juice, organic apple cider vinegar, Worcestershire sauce, and other spices to create a spicy, yet refreshing mix that can be combined with beer, hard alcohol, or tomato juice, according to a press release. The company’s Victoria Ho explained that the mix taps into consumers’ desire for sustainably-sourced, plant-based foods and beverages while also delivering rich flavors derived from all-natural ingredients.

While cocktails and mocktails are where the Michelada Shrub shines best, it is also innovative and versatile enough to shine just as brightly in sauces, marinades, and glazes, which Host Robert Irvine remarked upon during the competition. The Shrub’s versatility especially caught the judges’ attention, with all of the judges noting that it could be useful in hospitality, foodservice, or retail thanks to its availability in sizes like two-, eight-, and 16-ounce containers that are perfect for hotel mini-bars, fast casual restaurants, fine dining restaurants, and more.

This year’s Front Burner Foodservice Pitch Competition judges included the following:

  • Angela Flenoy, Sysco
  • Hugh Groman, Hugh Groman Catering
  • George Morrone, Kimpton Hotels and Restaurants

During the competition, the judges listened to each competitors' pitches, tasted the products, and assigned scores for innovation, quality, and chef-appeal using criteria like foodservice appeal, differentiation, and product innovation.

As this year’s winner, Pacific Pickle Works will receive a promotional prize package from the Specialty Food Association.
