Buholzer Brothers’ Wisconsin Brick cheese has a smooth, mellow flavor and creamy texture and can be used in home kitchens and restaurants alike

An American original, Brick cheese is produced in Wisconsin and was first made by John Jossi around 1877. Brick was named for its shape, but also because makers originally used clay-fired bricks to press the moisture from the cheese. Some makers still use the century-old bricks to this day.

With a cheesemaking process derived from white American Cheddar, Brick cheese is cultured at a slightly higher temperature, resulting in a semi-soft, creamy texture. The cheese is then brined for 12 to 24 hours before being vacuum-sealed or sent to aging rooms.

Brick ranges in color from pale yellow to white with a sweet and mild flavor when young, and matures into a strong, ripe cheese as it ages. The cheese melts well due to its high fat content and has a buttery flavor making it a perfect fit for Detroit-style pizza.
