Tillamook® recently added its Maker's Reserve 2011 and 2018 vintage Cheddars to its Maker's Reserve Program. The cheeses, which are released every January, make up the artisan cheesemaker's broader assortment of Maker's Reserve Extra Sharp White Cheddar vintages.
"Tillamook Maker's Reserve is a true testament to our passionate craftsmen and women," said Jill Allen, Director of Product Excellence for Tillamook County Creamery Association (TCCA). "We make these exceptional Extra Sharp Cheddars with pride, passion, and a double dose of patience for truly unforgettable flavor."
The 2011 Maker's Reserve has matured into a bold Cheddar, promising notes of apple, honey, and pineapple. A generous sprinkling of crunchy crystals and a short, dry texture makes this cheese well worth the wait. It will be exclusively available at Whole Foods Market stores across the country beginning in May.
"Whole Foods Market is proud of our partnership with one of the country's leading dairy farmer cooperatives," said Cathy Strange, Vice President Specialty and Product Innovation and Development at Whole Foods Market. "TCCA is a recognized industry innovator, and this delicious cheese is a product we are excited to offer exclusively at Whole Foods Market."
Each cheese in the Maker's Reserve program is incredibly unique, a press release explained. The 2018 vintage has flavors of malt and barley and is balanced by notes of grass and leek. The consistency of the cheese is short and crumbly, with salty hints of umami and toasted walnuts.
The 2018 Maker's Reserve can be found at Safeway and Market of Choice in Portland, Oregon, The Tillamook Creamery, and The Tillamook Market at Portland International Airport. It's also available for purchase online.
TCCA has a team of tasting and sensory exports that gather to grade each batch of cheese, all of whom are looking to create the next Maker's Reserve. Only a small selection makes the cut for this exclusive program, whose vintages have garnered accolades and awards from the American Cheese Society, the U.S. Champion Cheese Contest, and the International Cheese Awards.
Two cheeses that are well worth the time, effort, and anticipation. Count us in.
